Okay, since so many have been messaging about the falafel, here is the recipe. It is super easy, healthy, and packed with protein. You will need:
- A lemon
- cucumber chopped
- plain greek yogurt (3/4 C)
- fresh mint (1/4C)
- 2 cloves of garlic
- 1 can of no salt added chickpeas rinsed and drained
- chopped fresh parsley (1/4 C)
- whole wheat flour (1/4 C)
- 2Tbsp of Tahini
- 1tsp of baking powder
- 1tsp of ground cumin
- 1/2tsp each of salt and pepper
- 2Tbsp of olive oil
Grate the rind of the lemon to about 1tsp (and place in a food processor for later) and squeeze a tablespoon of the juice, coming it with the yogurt, mint and cucumber in a bowl and set aside.
In a food processor add the garlic, chickpeas, flour, parsley, tahini, baking powder, cumin, lemon rind, salt, and pepper until finely ground. Make into little patties. As you are making the patties, heat the oil in a pan over medium heat, add patties and cook about 4 minutes per side or until browned. Serve with the Tzatziki (yogurt and cucumber) sauce. Enjoy!
