Being busy and staying healthy is hard, but doable. Especially when you can have your breakfast already ready and waiting for you in the morning! I looooooove this banana steel cut oat recipe. Its is so yummy and delicious and fills your home with aroma of banana bread. If you do not have a crock pot or really don’t feel like washing the pot later, you can use these ingredients but put them in a big bowl and cover with boiling water and then place a lid (or a plate to trap in the heat) and let sit for an hour or more, and then transfer to the fridge in a covered container or mason jar.
So first things first and this is VERY IMPORTANT!!!! Coat your crock pot with non stick cooking spray or you will be hating life later when you are using all your muscles and a paint scraper to get the oats off the bottom of the crock pot. Again… COAT WITH COOKING SPRAY! After you have coated with cooking spray, add a cup and a half of steel cut oats to the pot along with 4 cups of water, and then 2 cups of you favorite milk or milk substitute. Add 3 tablespoons of chia seeds, half a teaspoon of salt, two teaspoons of cinnamon and vanilla, two mashed up bananas, about a half a tablespoon of sweet leaf or truvia (optional), a scoop of your favorite protein powder (optional) and a little drizzle of brown sugar. Cook over night and enjoy in the morning with some walnuts or a dollop of peanut butter on top.
1 1/2 C steel cut oats
4 C of water
2 C of milk or milk substitute
2 mashed bananas
3 Tbs chia seeds
2 tsp cinnamon
2 tsp vanilla
1/2 tsp salt
1/2 Tbs of sweet leaf(truvia) OPTIONAL
Scoop of protein powder OPTIONAL
Cook overnight and then top with walnuts or a dollop of peanut butter
