Vegan Bean Tacos

So my life consists of eating away from home 4 nights a week due to gymnastics. Otherwise I wouldn’t be eating dinner until 9 at night, which just does not jive with me. So a lot of the times, my dinner meals are ones that can be eaten hot or cold.  I was in a rush the other day and whipped these tacos up in a matter of a few short minutes and man oh man are they delish. To make this dish you will need:

Ezekiel tortillas ( or any other tortilla)

Beans of your choice (I used kidney)

Cheeze ( I used Daiya mozzarella (non dairy of course))

Avocado

Red onion

Cayenne pepper and a pinch of salt

I heated the tortilla and beans for a few seconds and then added all the ingredients on top and viola. I popped it in my lunch box and ate it cold that evening and it was delicious! Note that the Ezekiel tortillas kind of break apart, so if you choose to use those, have a fork handy. You will also notice I use cayenne a lot. It is my go to spice, especially when I am in a rush, when in doubt cayenne or garlic is my motto. If you are not a spicy person, lemon juice, garlic, and salt would be perfect! ENJOY!!!
